Monte Carlo Ice Cream Sandwich

Ingredients

Ice Cream Filling

  • 250g packet of Arnott’s Monte Carlo Biscuits
  • 2 cups vanilla ice cream, softened slightly
  • 1 cup frozen raspberries

 Ganache

  • 60g dark chocolate
  • 2 tbsp thickened cream

 Garnish

  • 1 punnet fresh raspberries and whipped cream

Method

  1. Combine ice cream and raspberries in a freezer-safe bowl. Mix until combined. Freeze until firm.
  2. Set aside 6 Arnott’s Monte Carlo Biscuits. Place the remaining 6 biscuits in a food processor, process until you have medium to fine crumbs.
  3. Combine chocolate and cream in a small saucepan over a low heat until melted and smooth. Set aside.
  4. Cut the remaining Arnott’s Monte Carlo Biscuits in half. Sandwich together with ice cream.
  5. To serve, spoon ganache onto the plates. Sprinkle with crumbs. Place the Arnott’s Monte Carlo Ice Cream sandwiches on top.
  6. Garnish with fresh raspberries and whipped cream.
