  • 200g packet Tim Tam Original
  • 1 litre tub vanilla ice cream
  • 2 cups desiccated coconut

CHOCOLATE ICING

  • 1 ½ cups icing sugar mixture, sifted
  • ¼ cup cocoa powder
  • 1/3 cup boiling water

  1. Remove whole container of ice cream onto a chopping board. Cut ice cream into 11 6cm x 3cm rectangle size pieces. Place on a tray lined with baking paper. Freeze for 1 hour or until firm.
  2. One at a time, cut Tim Tams in half, horizontally, with a small sharp knife. Sandwich with one piece of ice cream. Place on a tray lined with baking paper. Repeat with remaining biscuits and ice cream to make 11 sandwiches. Freeze for at least 4 hours, or until very firm.
  3. To make icing, combine all ingredients in a medium bowl. Stir well to combine. Cool slightly.
  4. One at a time, dip biscuit sandwiches into icing, allowing excess to drip away, then into coconut to coat. Return to tray. Freeze until firm.
