Strawberry and Mascarpone Wafers

Ingredients

2 x 250g punnets strawberries, hulled, halved
1/4 cup (55g) caster sugar
1 tsp vanilla extract
250g mascarpone cheese
1/4 cup (60ml) thickened cream
1 tbsp sifted icing sugar
12 Arnott's Lattice biscuits

Method

  • Place strawberries, caster sugar and vanilla in a saucepan over medium-high heat and cook, stirring, for 1-2 minutes until the sugar has melted and the strawberries have just started to soften (be careful not to  overcook them, they still need to be firm).
  • Whisk together the mascarpone, cream and icing sugar. Place half the biscuits on serving plates, top each with a dollop of the mascarpone cream, followed by some of the strawberries, reserving any juices. Top with the remaining biscuits and drizzle with the berry juices.
