Ingredients
2 x 250g packets Lattice biscuits
250g cream cheese, softened
250g caster sugar
250g butter or margarine
1 tsp vanilla essence
6 tsp lemon juice ( more if stronger flavour desired)
2 tsp gelatine dissolved in 1/2 cup boiling water
Method
- Place cream cheese and butter into a large mixing bowl. Beat with an electric mixer, until light and fluffy and well combined.
- Stir in vanilla essence, lemon juice and dissolved gelated and beat for a couple of minutes until combined.
- Line a lamington tray with non-stick baking paper. Place a single layer of lattice biscuits, cutting to fit if necessary, onto the base of the tin.
- Pour over cream cheese mixture. Top with another layer of biscuits, glossy side up. Place into the freezer to set. Cut into desired sizes and store in a container in the freezer until ready to eat, put remainder back in the freezer.
TIP: This is quite rich I usually cut a slice to the size of the lattice biscuits and then cut in half again.
